Non-alcoholic aperitif

‘Midnight Sun’ takes inspiration from the wild Nordic regions where daylight ventures through the night. This bottled phenomenon combines hand-picked seaberries and elderberries with the creative use of kelp and pine to give a new perspective on complex flavour combinations.

Crafted by our team of expert distillers, who make a core part of the process at our waterside distillery in Salcombe. We’re proud to keep as much of the process in house as possible and although ‘Midnight Sun’ is inspired by Norway’s rugged landscapes, we’re often able forage for some of the key botanicals locally such as kelp and alexanders.

BOTANICALS
Inspired by the Nordic region

‘Midnight Sun’ has been carefully distilled and crafted with 7 botanicals and a further 7 natural flavours, all of which have been hand-selected to showcase the flavours of the wild Nordic coastlines and nod towards the pillars of modern Nordic cuisine.

Elderberries / Seaberries / Samphire / Kelp / Icelandic Moss / Pine / Alexanders / Lingonberries

To create our non-alcoholic aperitifs, we make a ‘botanical steep’ using neutral grain spirit and water. The use of alcohol is an important part of the process to extract and carry flavour. The steep is then distilled in our rotary vacuum still; a process that removes the alcohol without removing the flavour. This creates a highly concentrated core flavour distillate, which acts as the backbone of ‘Midnight Sun’. This core flavour distillate is then carefully blended with further natural flavours and stabilised with the unusual use of kombucha.

Ingredients: Water, grape juice from concentrate, kombucha, natural botanical distillates and extracts. Acids: tartaric and malic. Acidity regulator: sodium citrate. Preservatives: potassium sorbate and sodium benzoate. Thickener: xanthan gum.

MIDNIGHT SUN & TONIC
ingredients
  • 50ml New London Light ‘Midnight Sun’ 
  • 150ml Premium light tonic water
  • Mint leaf
  • Raspberry
method
  • Fill a highball glass with ice. 
  • Add one large measure of ‘Midnight Sun’. 
  • Add 150ml of premium light tonic water.
  • Garnish with a mint leaf and a single raspberry.
  • Gently stir and serve.
ALESUND APPLE
ingredients
  • 50ml New London Light ‘Midnight Sun’
  • 25ml Cloudy apple juice
  • 15ml Lime juice
  • 2 Mint leaves
  • Red apple
method
  • Add all the ingredients to a Boston shaker filled with ice. 
  • Shake hard and double strain into a chilled Nick and Nora glass. 
  • Garnish with thinly sliced red apple to create a fan effect and enjoy.
ALPENGLOW
ingredients
  • 50ml New London Light ‘Midnight Sun’ 
  • 15ml Lime juice 
  • 15ml Honey water* 
  • 25ml Cranberry juice 
  • 3 x Fresh raspberries
  • 20ml Aquafaba 
  • Freeze-dried raspberries to garnish
method
  • Add the ‘Midnight Sun’, lime juice, honey water, cranberry juice, fresh raspberries, and aquafaba to a cocktail shaker and dry shake without ice for 15 seconds. 
  • Add ice to the shaker and shake hard again for a further 15 seconds.
  • Double strain into a chilled tumbler over ice.
  • Garnish with freeze-dried raspberries.

*To make the honey water, add 100ml of honey to 100ml of boiling water in a jug and stir until the honey has dissolved. Place in the fridge to cool before using.
