Inspired by adventures in pursuit of golden horizons, ‘Aegean Sky’ captures the essence of the vibrant Mediterranean coast to create a flavour profile reminiscent of the region’s finest citrus and olive groves. Every sip of this creative combination of sun-soaked bitter citrus and olive takes you on a journey into a new world of flavour.

Harnessing our Master Distiller Jason Nickels’ extensive knowledge and understanding of flavour, foraging, botany, and of course distillation, we’re proud to craft as much of the process at our waterside distillery as possible.

BOTANICALS
Inspired by the Mediterranean Coast

‘Aegean Sky’ has been carefully distilled and crafted using 6 botanicals and a further 6 natural flavours, all of which have been handpicked to showcase the vibrant coastlines of the southern Mediterranean.

Kumquat / Blood Orange / Olive / Rosehip / Bergamot / Rosemary

To create our non-alcoholic aperitifs, we make a ‘botanical steep’ using neutral grain spirit and water. The use of alcohol is an important part of the process to extract and carry flavour. The steep is then distilled in our rotary vacuum still; a process that removes the alcohol without removing the flavour. This creates a highly concentrated core flavour distillate, which acts as the backbone of ‘Aegean Sky’. This core flavour distillate is then carefully blended with further natural flavours and stabilised with the unusual use of kombucha.

Bursting with bright citrusy notes, this refreshing aperitif from Salcombe Distilling Co. is inspired by the sun-soaked shores of the Mediterranean. Layers of bitter blood orange and bergamot are softened by earthy olive and a lingering herbaceous aroma of rosemary. It works best as a spritz, mixed with a light tonic or non-alcoholic sparkling wine, then served over ice.

AEGEAN SKY & TONIC
ingredients
  • 50ml New London Light ‘Aegean Sky’ 
  • 150ml Premium light tonic water
  • Rosemary sprig
  • Black olive
method
  • Fill a highball glass with ice. 
  • Add one large measure of ‘Aegean Sky’.
  • Add 150ml of premium light tonic water.
  • Garnish with a sprig of rosemary and a black olive.
  • Gently stir and serve.
KALAMATA SPRITZ
ingredients
  • 50ml New London Light ‘Aegean Sky’ 
  • 75ml Non-alcoholic sparkling wine or Prosecco 
  • ½ Bar spoon of olive brine 
  • Kalamata olive 
  • Fresh whole orange
method
  • Fill a large wine glass with ice.
  • Add the ‘Aegean Sky’, non-alcoholic sparkling wine and olive brine to the glass.
  • Stir gently to combine.
  • Garnish with an orange wheel and black olive.
CALABRIA COOLER
ingredients
  • 50ml New London Light ‘Aegean Sky’
  • 12.5ml Lemon juice
  • 12.5ml Agave syrup
  • 100ml Chilled Earl Grey tea
  • Rosemary sprig
method
  • Brew a strong Earl Grey tea with a sprig of rosemary in it and leave it to cool.
  • Once cool add all the ingredients to a Boston shaker filled with ice. 
  • Shake hard and double strain into a tumbler with a large ice cube. 
  • Garnish with a rosemary sprig and enjoy.
